Ingredients
2 large bell peppers
1 tablespoon olive oil
150 grams ground beef or turkey
1 small onion, chopped
1 clove garlic, minced
100 grams cooked rice
200 grams canned diced tomatoes, drained
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
50 grams shredded cheese (cheddar or mozzarella)
Method
1. Prepare the Bell Peppers:
Preheat the oven to 180°C (350°F).
Cut the tops off the bell peppers and remove the seeds and membranes.
Place the bell peppers in a baking dish, open side up.
2. Cook the Filling:
Heat the olive oil in a pan over medium heat.
Add the chopped onion and minced garlic; cook until they become soft and fragrant.
Add the ground beef or turkey and cook until it is fully browned and no pink remains.
Stir in the cooked rice, diced tomatoes, oregano, basil, salt, and pepper. Mix thoroughly.
3. Stuff and Bake:
Fill each bell pepper generously with the meat and rice mixture.
Top with shredded cheese.
Cover the baking dish with foil and place it in the oven. Bake until the peppers are tender, and the cheese is melted.
Remove the foil and bake a little longer until the cheese is bubbly and slightly golden.
4. Serve:
Remove from the oven and let cool slightly.
Serve the stuffed bell peppers hot and enjoy their delicious aroma and vibrant appearance.
