Stuffed Bell Peppers

Ingredients
  • 2 large bell peppers

  • 1 tablespoon olive oil

  • 150 grams ground beef or turkey

  • 1 small onion, chopped

  • 1 clove garlic, minced

  • 100 grams cooked rice

  • 200 grams canned diced tomatoes, drained

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • Salt and pepper to taste

  • 50 grams shredded cheese (cheddar or mozzarella)


Method

1. Prepare the Bell Peppers:

  • Preheat the oven to 180°C (350°F).

  • Cut the tops off the bell peppers and remove the seeds and membranes.

  • Place the bell peppers in a baking dish, open side up.


2. Cook the Filling:

  • Heat the olive oil in a pan over medium heat.

  • Add the chopped onion and minced garlic; cook until they become soft and fragrant.

  • Add the ground beef or turkey and cook until it is fully browned and no pink remains.

  • Stir in the cooked rice, diced tomatoes, oregano, basil, salt, and pepper. Mix thoroughly.


3. Stuff and Bake:

  • Fill each bell pepper generously with the meat and rice mixture.

  • Top with shredded cheese.

  • Cover the baking dish with foil and place it in the oven. Bake until the peppers are tender, and the cheese is melted.

  • Remove the foil and bake a little longer until the cheese is bubbly and slightly golden.


4. Serve:

  • Remove from the oven and let cool slightly.

  • Serve the stuffed bell peppers hot and enjoy their delicious aroma and vibrant appearance.
