A hearty breakfast of eggs in rich tomato sauce.

Ingredients
1 tsp olive oil
1 onion, chopped
2 cloves of garlic, minced
1 bell pepper, chopped
400g tomatoes (fresh or canned)
1 tsp cumin
1 tsp paprika
4 eggs
Crusty bread or pita
Optional Toppings:
1/2 tsp chilli powder (or your preferred spices)
30g feta cheese, crumbled
2 tsp fresh herbs (parsley or coriander)
1-2 avocados, sliced
Method
1. Prepare the sauce: Heat olive oil in a large pan over medium heat. Sauté chopped onion and bell pepper until they are softened. Add minced garlic and continue cooking until fragrant. Stir in the tomatoes, cumin, paprika, and chilli powder, if using, and let the sauce simmer until it thickens.
2. Add the eggs: Create small wells in the sauce and crack one egg into each well. Cover the pan and cook until the eggs are done to your preference.
3. Garnish and serve: Sprinkle fresh herbs and feta cheese over the top. Serve with crusty bread or pita for dipping. Optionally, add sliced avocado.
