Ingredients
For the Meatballs:
225g ground turkey
25g breadcrumbs (gluten-free optional)
1 egg
2 cloves garlic, minced
1 tbsp fresh parsley, chopped (optional)
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp mixed herbs
For the Sauce:
1 tbsp olive oil
1/2 onion, finely chopped
1 clove garlic, minced
1 can (400g) chopped tomatoes
1/2 tsp mixed herbs
1/4 tsp salt
1/4 tsp black pepper
Optional Sides:
• Cooked paste (gluten-free optional)
• Steamed vegetables or a mixed greens salad
Method
1. Prepare the meatballs:
In a bowl, mix the turkey, breadcrumbs, egg, garlic, parsley (if using), salt, pepper, and mixed herbs. Shape into small, evenly-sized meatballs.
2. Cook the meatballs:
Heat the olive oil in a pan over medium-high heat. Add the meatballs and cook, turning occasionally, until they are browned on all sides and firm to the touch. To ensure they are cooked through, cut one meatball in half—there should be no pink inside, and the juices should run clear. Remove from the pan and set aside.
3. Prepare the sauce:
In the same pan, add the onion and sauté until it turns translucent and soft. Add the garlic and cook until fragrant. Stir in the chopped tomatoes, mixed herbs, salt, and pepper. Let the sauce simmer until it thickens slightly and the flavours meld together.
4. Prepare the optional sides:
Pasta: Cook the pasta according to the package instructions until al dente. Drain and set aside.
Mixed Vegetables: Steam the vegetables until tender but still crisp.
Mixed Greens Salad: Toss mixed greens with your favourite salad dressing.
5. Combine and serve:
Return the meatballs to the pan, ensuring they are well-coated with the sauce and heated through. Serve the meatballs and sauce over the cooked pasta. Pair with steamed vegetables or mixed greens salad for a complete meal.
