Garlic Mushroom Chicken Stir Fry with Rice

Ingredients
  • 1 tbsp olive oil

  • 2 chicken breasts, sliced into thin strips

  • 2 cloves garlic, minced

  • 60g mushrooms, sliced

  • 100 grams broccoli florets

  • 1 tbsp of soy sauce

  • 1/2 tsp grated ginger

  • 1-2 spring onions, chopped

  • 200g uncooked rice

  • 400ml water (for rice)

  • Lemon wedges (for garnish)


Method

1. Cook the Rice:

  • Rinse the rice until the water runs clear.

  • In a saucepan, add the rice and 400 millilitres of water. Bring to a boil.

  • Reduce the heat, cover, and let the rice absorb the water until tender.

  • Fluff the rice with a fork and keep warm.


2. Stir Fry:

  • Heat the olive oil in a large pan over medium-high heat.

  • Add the sliced chicken and cook until golden brown and cooked through. Remove from the pan.

  • In the same pan, add the minced garlic and grated ginger and sauté briefly.

  • Add the sliced mushrooms and broccoli florets and stir until they are tender.

  • Return the chicken to the pan.

  • Add the soy sauce and stir well.


3. Serve:

  • Divide the rice onto two plates.

  • Top with the chicken, mushroom, and broccoli mixture.

  • Garnish with chopped spring onions and lemon wedges.
