Quick, nutritious, and bursting with flavour—Garlic Mushroom Chicken Stir Fry with Rice

Ingredients
1 tbsp olive oil
2 chicken breasts, sliced into thin strips
2 cloves garlic, minced
60g mushrooms, sliced
100 grams broccoli florets
1 tbsp of soy sauce
1/2 tsp grated ginger
1-2 spring onions, chopped
200g uncooked rice
400ml water (for rice)
Lemon wedges (for garnish)
Method
1. Cook the Rice:
Rinse the rice until the water runs clear.
In a saucepan, add the rice and 400 millilitres of water. Bring to a boil.
Reduce the heat, cover, and let the rice absorb the water until tender.
Fluff the rice with a fork and keep warm.
2. Stir Fry:
Heat the olive oil in a large pan over medium-high heat.
Add the sliced chicken and cook until golden brown and cooked through. Remove from the pan.
In the same pan, add the minced garlic and grated ginger and sauté briefly.
Add the sliced mushrooms and broccoli florets and stir until they are tender.
Return the chicken to the pan.
Add the soy sauce and stir well.
3. Serve:
Divide the rice onto two plates.
Top with the chicken, mushroom, and broccoli mixture.
Garnish with chopped spring onions and lemon wedges.
